BBQ Chicken Bake (Low Carb, Easy, Family Style)

Ingredients

Chicken:

• 3–3.5 lbs chicken thighs or drumsticks (bone-in recommended for juiciness)

• 1 ½ tsp salt

• 1 tsp black pepper

• 1 tsp smoked paprika

• 1 tsp garlic powder

• 1 tbsp olive oil

Low-Carb BBQ Sauce (quick mix):

• 1 cup sugar-free ketchup

• 2 tbsp apple cider vinegar

• 1 tbsp Worcestershire sauce

• 1 tbsp Dijon mustard

• 1–2 tbsp monk fruit or stevia (optional)

• 1 tsp smoked paprika

• ½ tsp chili powder

Sides:

• 2 lbs broccoli florets

• 2 tbsp butter

• Salt & pepper to taste

Instructions

1. Preheat oven to 400°F.

2. Season the chicken:

Mix salt, pepper, smoked paprika, garlic powder, and olive oil. Rub over all chicken pieces.

3. Whisk BBQ sauce:

Combine all sauce ingredients in a bowl. Adjust sweetness/acidity to taste.

4. Bake the chicken:

• Place chicken on a sheet pan or baking dish.

• Brush generously with BBQ sauce.

• Bake 25 min → brush with more sauce → bake 15–20 min more.

• Chicken should hit 165°F internal.

5. Cook the broccoli:

Steam or roast (your choice). Toss with butter, salt, pepper.

6. Serve:

Reserve ¼ cup BBQ sauce for dipping at the table.

Leftover Tip

Shred leftover chicken → mix with a bit of extra BBQ → use for stuffed peppers, lettuce wraps, or BBQ chicken bowls the next day.
